This meal is not only easy on the pockets, it's also easy on time! It can easily be made in 30 minutes AND will impress all the homies ( or in-laws)! If you want to fire the grill up you can get fancy and actually grill your fish as well as your pineapple prior to cutting it up for the salsa. I can only imagine how great it would taste with the smokey flavor!!
Honestly, I love Bibb/Boston lettuce it will be hard to ever use any other lettuce for bun-less dishes I make (i.e. turkey burgers)! I typically buy whats called 'living' lettuce, the roots are still attached for this. Living lettuce is able to literally live longer since the roots are still attached thus making it much for functional for other dishes throughout the week! Whole Foods offers a hydroponic version for $2.99, but I bought mine from Meijer's for $1.99!
Here's how to make some these easy and healthy fish tacos!!
Ingredients:
Filling:
5-6 pieces of Tilapia
1 tsp salt and pepper for fish
1 cup of fresh cute cabbage or buy the precut bag of coleslaw
Bibb/Boston Lettuce
Salsa:
1 cup sliced and cubed pineapple
1 can Rotel (or tomatoes, whateva' fits your fancy)
¼ cup chopped onion (optional)
Juice of 1 lime
Slaw
1 Head of Bibb or Boston lettuce
1 tablespoon olive oil
½ tablespoon honey
½ tablespoon vinegar or vinaigrette of your choice
1 teaspoon garlic powder Salt/pepper to taste
Cilantro for garnish
Instructions:
2. Mix 1 cup of cubed (bite size pieces) pineapple, onion, and ¼ - ½ cup of Rotel with remaining lime juice cover and store in fridge.
3. Combine olive oil, honey, vinegar, garlic powder, salt and pep, then stir until combined. Mix with chopped cabbage or coleslaw!
TIME TO COMBINE!
1. Flake pieces of tilapia into bite size pieces, place 1-2 spoonful’s into Bibb lettuce shells, top with slaw, and pineapple salsa!! 2. Garnish with chopped cilantro on top!! Enjoy!
