This recipe only happened because I love donuts but I couldn't stand frying them. Plus I have big hair and I didn't want to smell like fried food all day. You big haired girls know what I'm talking about!!
I was also quite lazy and didn't feel like driving anywhere. So I became Ray Be Dunkin Donuts, real quick, 0-100. Sorry every time I here real quick I sing Drake.
Anywho if you really want to impress your friends during brunch and mimosas or your boo thang with breakfast in bed these are perfect and quite a bit healthier than Krispy Kreme!! Here's how I made them!!
Oil your donut pan or use baking spray
2 cups all-purpose flour
1 1/2 cups coconut sugar or alternate sweetener
2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon kosher salt
1 extra-large egg, lightly beaten
1 1/4 cups almond milk
2 tablespoons unsalted butter, melted
2 teaspoons pure vanilla OR almond extract
Directions
Preheat the oven to 350 degrees. Spray 1 doughnut pan well.
1. In a large bowl mix your flour, coconut sugar, baking powder, cinnamon, nutmeg, and salt.
2. Whisk together the egg, almond milk, melted butter, and vanilla or almond extract in a small bowl.
3. Mix your wet and dry mixture until smooth and creamy.
4. Pour batter into a large zip lock bag and cut a small slit in it. Then fill each donut mold about 3/4s full.
5. Bake donuts for about 15-20 minutes, or when a toothpick comes out clean.
6. Let donuts cool for 5 minutes, then gently tap pan so the donuts fall out.
I never use all my batter so I will pour batter into another zip lock bag and can be frozen for several weeks. If you use it let the batter thaw naturally not in water or in the microwave.
For the topping:
1. Combine 2 tablespoons of powdered sugar with 1 teaspoon of almond milk and a dash of vanilla.
2. Whisk until smooth. Then gently drop your donut in the mix, take out and place on cooling rack so that the icing gets a little dried!
EAT!! I made a bacon egg and cheese sandwich with mine!! What will you do?
