Healthy Kebabs 2 Ways!



So many of us are pressed for time, it's hard to find the time to make healthy dishes. NOTTTTT! This kebab recipe is super easy an can be made a few days ahead of time. What's even better is you can pop them in the over for 20 minutes or you can throw them on the grill in no time.



For this recipe, we are using fresh bell peppers in a variety of colors and to save on time even more we are swapping out homemade meatballs for lean and protein packed pre made chicken meatballs! Remember we're short on time! 

Let's go to the fruit kebabs, these are even simpler! You can either chop up all the fruit for yourself or if you're like me and always on the go you can get pre chopped fruit! Now these fruit kebabs would be OK by themselves but to kick it up notch we're going to add a basil yogurt dipping sauce! Luckily Yoplait makes a lactose free version just for folks like me! 

Here's how I make them: 

1 package of meatballs (I used Ardell's Chicken Teryaki Pineapple)
1 green bell pepper 
1 red bell pepper 
1 yellow bell pepper 
2 medium sweet potatoes chopped into 1-2inch chunks 
*if you're using the grill soak wooden kebab sticks about 20-30 minutes so thy don't burn* 

Directions: 
1. Preheat oven to 350 degrees.
2. Layer all ingredients in whatever pattern you want! This is the part where you can get creative! 
3. Place on cooling rack on top of large cookie sheet. Cook for 20 minutes or until sweet potatoes are soft. 
4. Remove and let cool 

Fruit Kebabs 

Watermelon 
Pineapple 
Kiwi 
Strawberry 
Grapes 
Melon 

All fruit should be cut into bite size cubes. 
1. Layer fruit in any order, you want. 

Dipping sauce

1-2 cups of Yogurt (Peach or Vanilla works great) 
1/2 tablespoon lime juice 
1-2 teaspoons cinnamon 

Directions: 

Mix all ingredients together and let sit in fridge for about 20 minutes.
