Parmesan Crusted Asparagus

 So my mom was so clutch last week! I had chicken in the freezer and mixed spring arugula mix in the fridge, but if you know me you know I have to be slightly more fancy than baked chicken and a salad. My mom had some asparagus and decided I needed it and boy was she right. Again, as with most recipes I'm too lazy to leave the house to go get extra ingredients. I always have Panko and Parmesans cheese on hand so I whipped a few thangs together.

It's finally fall y'all and I love just about anything spiced. Now I love pumpkin spice just as much as the next person, but all these apples are on point this time of year, and Sweetango Apples are finally in Cincy, so it's only fitting I make apple pie pancakes right?  I also didn't want to go to the grocery store and buy anything, so I just used what I already had in my kitchen.

Last night after my mother and I attended a networking event, we were pretty hungry and didn't really feel like driving out of downtown. Literally right across from my parking space was Pi Pizzeria, it was a simple decision. It was too late to eat a deep dish pizza (but I need to go back ASAP for the pizza) and I just needed something light.

Most yuppies (Young, Urban, Professionals) all have something in common when it comes to our living situations… no space! For those of you who have a house with some real grass consider yourself lucky!! Having lived in an awesome studio loft in college, I loved the convenience of walking to all the clubs and bars, but hated the lack of space to kick it with my friends! I’m a proven and certified hungry girl, so not having a huge grill or prep space made it difficult to entertain, even at the park!

Here are few ways to make your Urban BBQ hit:

Sea Salt and Garlic Green Beans

                          



I love fresh green beans, they are soooooo much better than green beans in the can. Realistically it doesn't take that long to cut them up, in fact,  didn't cut mine only on the ends that looked a little brown. Here's how I made them:


Funfetti Pancakes


I've been craving pancakes for awhile now and this Sunday I actually had time to make them, the prep is super easy and fast. The product is the best pancakes you've ever tasted. I mean... for real... you'll never need to go to IHOP again.  This is def going in the new  'Cheat Day Meals' Tab! Don't worry I'm creating a protien baked donut recipe with plenty funfetti in it, that'll be up later this week!

Similar to the Pink Lemonade Margarita Waffles I made a few weeks ago you'll also use boxed cake mix. The pancakes are already pretty sweet so I didn't want to use a powdered sugar based frosting or syrup. Instead I made my on whip cream frosting from heavy whipping cream, a tablespoon of sugar, and 1 teaspoon of almond extract, I whipped it until peaks formed then put in the fridge until my pancakes were done!

These pancakes were perfect, I'm talking fluffy, sweet, colorful, and seriously made me do my 'this dish HITS' dance. Sorry guys, only my dog gets to see that!

Nutella Cheesecake Mousse


I had a random sweet tooth...per the usual. But it was storming outside, so the grocery store wasn't an option (it was an option, but my lazy Saturday button was turned on 100). My other option was to make cupcakes, but I didn't have any powdered sugar, so I couldn't make buttercream. Serious first world problems over here! 

Since I refused to eat Nutella straight out the jar another day I decided to get a lil creative. I had 4 ingredients and boy lemme tell you I made some shake with them! 

I only used Nutella (actually mine was Kroger brand because I'm cheap... I mean thrifty!), graham crackers, fat free cream cheese, and butter. This personal size dessert only took me 15 minutes to make! Here's how I made it:
