Pumpkin Spice Biscuits

These biscuits are the bee's knees... 

For real these biscuits were by far the BEST biscuits I've ever made or tasted. No BS. Surprisingly they weren't as difficult to make, sometimes adventuring into scratchmade things I get nervous! They had a beautiful color, super soft, a hint of pumpkin pie spice, and tons of sweet salty flavor! 
Since I was actually hungry and not just creating a recipe I went ahead and made a quick BAE sandwich. For those of you who don't know, the culinary meaning of BAE is bacon and eggs.  

This would be the perfect addition to your Thanksgiving breakfast or brunch!

Here's how I made them!! 

INGREDIENTS: 

2 cups all-purpose flour  
1 1/2  teaspoons baking powder 
2 teaspoons pumpkin pie spice 
2 teaspoons ground ginger
Pinch of salt
 2 1/2 tablespoons chilled butter
1/4 cup almond milk 
1/2 cup canned pumpkin 
3 tablespoons raw agave 

DIRECTIONS: 
1. Preheat oven to 400°.

2. Combine flour, baking powder, pumpkin pie spice, ginger, and salt in a mixing bowl; cut in butter with 2 knives or if you have a pastry cutter use that until flour and butter looks lumpy. Put in the fridge for 8-10 minutes.

3. Mix almond milk and agave until the 2 become 1 (sorry I had to, it's a Spice Girls reference lol) just make sure the two are fully combined! Then add in your pumpkin. Next, add almond milk agave combo to the flour mix, stir the two combos until it's semi well incorporated.

4. Roll out the dough out on a flat and well floured surface. Roll or flatten with your hands the dough into square ( I do both, cuz I never follow directions :)); dust your dough with flour. Fold over the dough several times. Each time flatten dough, re-flour then fold over again. I did it about 8 times. 

5. Next roll or flatten to about 3/4-inch thick square. Cut dough with a biscuit cutter, since I don't have one I used a cup upside down. Place biscuits onto your baking sheet. Bake at 400° for 10-15 minutes or until golden. Let cool 2 minutes or until you can stand touching it.

Serve as a sammich or spread your fave preserves on it. Hmmmm Apple butter or wait minute.... Peach preserves!! Monell's here in Nashville has the best peach preserves, they may even ship ya'll! Better yet, throw some friend chicken on this and make a chicky biscuit!
If you make too many you can freeze them and pop them in the oven for 10-15 minutes on 350 degrees.
