Nashville's Local Fest @ the Mansion

      
Local fest is a great event located at The Mansion that not only is hosting a splendid pop up dinner (with top Nashville chefs), but also introduces the community to awesome artisans and farmers.  

There is a slew of participants, no one will get bored at this event! I mean there will be food trucks, local brews, yard games, local vendors and farmers! 

It's only fitting that the Local Fest take place on one of the city's most beautiful properties! The Riverwood Mansion is a local gem for East Nashvilians! PLUS, this event will also benefits the Vets and several bands will be on site for performances as well! 

Cut the Crap - Week 1

I made it through my first week of the detox with no major hiccups! The next 2 weeks don't seem to bad, the hardest day was day 3 because my hunger was at its highest point. I mean I was hungry all day from start to finish, I felt very weak and lethargic. Seriously, I was dying for some coffee but that was nixed seeing how I like more cream than coffee and that clearly goes against the whole detox. So I attempted to drink very black unsweetened coffee... I don't see how people do it, it was terrible. I chugged it and vowed never to drink coffee black lol. 
I did a pretty good job at meal planning, it was my first time prepping that much food that for that many days, lucky for me it ran pretty smooth with the help of my Crock Pot and Sam's club! I also developed a few new recipes for a Clean Breakfast Bar, a juice, and a vinaigrette!

Dark Chocolate Rice Cakes

Most people I know hate rice cakes, they are typically bland and dry. Well not these cake!! Well they're still dry but that's obvious, but when dipped in chocolate and topped with Honey Chipotle almonds, chia seeds, and sunflower seeds they're bomb.com. I wanted a low cal snack that packed a big punch in the flavor department and these worked out perfectly. These rice cakes also are the PERFECT late night snack!

INGREDIENTS: 

(this is for 8 rice treats)
4 Rice Cakes (I went with Apple Cinnamon)
2 chocolate bars 
Sunflower Seeds
Chia Seeds 
Chipotle Honey Almonds

DIRECTIONS: 

1. Cut rice cakes in half and melt chocolate in microwave for 30 seconds at a time stirring frequently. Make sure they don't burn and get lumpy!

2. Coat top 1/2 of rice cake with chocolate. 

3. Immediately add chia, sunflower, and almonds to chocolate protion. 

4. Allow to cool by placing rice cakes in freezer so the chocolate hardens, and ingredients stick!

 These rice cakes are seriously unbelievable! I couldn't even wait to eat these, originally they were made ahead for my boo's birthday, I don't think they'll make it very far. Oh and did I tell you they were super easy?

Music City Food and Wine Fest 2015

 


Today I had the pleasure of going to my first food and wine festival ever! Words really can't describe how much fun I had and I got to share it all with my wonderful boyfriend. This event was welcoming from the beginning when we walked in there was an awesome Infiniti display, got the chance to check out some dream cars! Each person was given an cute recyclable bag, a plastic wine glass, and a few Goo Goo Clusters..they were very tasty and I understand the cult following now.

Immediately upon arriving I saw this really awesome Iron Chef and one of the hosts of The Chew, you may have heard of him Michael Symon. So I ate some grilled chicken first, then bought one of his books which I plan on cooking my way through. I waited patiently in line like a giddy child waiting to see Santa, when my time came and I was so nervous. Then I met him, and he decided to talk trash about my 3-0 Bengals, but he was great despite his love for his Cleveland Browns...oops.

Special Feature: Otaku South - Nashville TN

 Otaku South
I'm new...wait I can't use the "I'm new" thing anymore its been 9 months. So I'm slightly a resident of Nashville and for months I'd heard about Otaku South, but I couldn't get over the Ramen noodle thing; I couldn't understand how one could class those things up. I only remember eating the incredibly cheap, salty, and delicious treat either at 12am or before soccer practice because the cafeteria was sub par putting it nicely...very nice.

Actually my boyfriend is the one who convinced me to give it shot after I showed him all the Otaku pics on my phone and my continuous re-gramming on IG! So we showed up on a Friday night looking to try something new, and boy did we find it! The food was phenomenal and I've already recommended Otaku to several people local and even out of state! The dishes are incredibly flavorful, in fact nearly unexplainable because I've never tasted such great food! I don't mind the egg so much either...

Although Sarah is incredibly busy running the versatile, hip, fresh, organic POP Nashville. But POP is another post :). We had a chance to catch up with her and find more about Otaku South...

1. What brought you to Nashville or are you a native?

I am from Columbia TN just south of Spring Hill. I spent 17 years in LA and decided to move back 5 years ago.
 
2. How'd you get the idea to make and sell Ramen? Was is your fave food in college?

Los Angeles greatest asset (in my mind, other then the weather and the beaches) is the incredible diversity of ethnic food available. You can pretty much GO to Japan in Los Angeles. So I did, A LOT in the 17 years I lived there. Traditional ramen (not college, or “Top” Ramen as it were) is a very habitual food. The more you eat it, the more you want it and love it. I had a Japanese grocery store up the road from my house that I would frequent. It had a ramen shop in the food court..it changed my life. It was my favorite meal to eat by myself. Just me, and my thoughts and a bowl of magic. A bowl of Santouka ramen would literally change my mood from a bit gnarly, to really awesome! It’s special.




3. What drew you to using the POP space in East Nashville?

This was the original commissary kitchen for OTAKU SOUTH, and I never thought I would open a place here, but the more we looked at the opportunity the more it made sense. We love it here. Have you seen the sunsets from our patio? Stunning

4. Who inspires your and what is most fulfilling for what you do?

 Oh wow, where do I begin? I am drawn to the creative faculty in so many modalities, not just cooking, but the Chefs I admire the most are the ones who have built veritable empires while remaining close to their kitchen. Chef means “chief” not “cook”, which I realized when I set foot in a commercial kitchen. Two Southern Chefs I admire the most are Frank Stitt and John Currance (sp?). They are incredible business men, with a palpable passion for what they do and a deep connection for their communities. That makes me swoon. 

5. How did you develop your recipes? 

Probably different then a trained chef. For me RAMEN is about knowing the rules and then breaking them. I could never make an “authentic” bowl of Tokyo style Shoyu ramen, because I simply can’t get the same soy, and dashi they use, and those are the key elements of that dish, so I really work to create recipes that ring the memory bell but stand out as unique enough to be accepted on their own.

Spotlight Feature: The Peach Cobbler Factory, Nashville TN


Anyone who's visited the Nashville Farmer's Market likely has at least sampled The Peach Cobbler Factory and they're glorious peach cobbler. It's sweet, gooey, tangy, soft, melts in your mouth, has a little bit of chew to it. It's the closetest any cobbler has been to tasting like my Granny's...trust me, that's saying A LOT coming from me!
